Nutritious & Delicious - Vegetarian Spaghetti

A couple weeks ago the Hubs and I had were hanging out at home. We'd have a late lunch so around 8ish I wasn't starving, but I was hungry again and wanted a light dinner. I whipped up this little dinner because we had all the necessary ingredients on hand. Since then the Hubs has asked me to make it about 5 different times, so last night I picked up some Spaghetti Squash and mushrooms on my way home and surprised him.

Ingredients
1/4 c chopped Onion
1/4 c sliced Mushrooms
1 clove Garlic, minced
EVOO
Red Wine
2 8oz cans Tomato Sauce
1/2 Spaghetti Squash

Squash Directions
1 - Cut the squash in half, longways. I have to have the Hubs do this, I'm just not strong enough.

2 - Put 1/2 of squash cut-side down in a glass baking dish with about 1/4 cup of water. Cover with plastic wrap.

3 - Microwave for 10-12 mins. You may need to microwave longer depending on the size of your squash.

4 -Use a fork to scrap and remove the squash.


Sauce Directions
1 - Thinly coat the pan with EVOO and sauté onion, mushrooms and garlic in a little red wine. The longer you can sauté, the better this will taste. You may need to occasionally add water to the pan.

2 - Add Meatless Meatballs, continue cooking.

3 - Mix in tomato sauce and continue cooking until hot.

It looks like a ginormous amount of food because it's on a little plate... I promise.

I have never seen this spaghetti squash you speak of. What does it taste like? I'm so intrigued. I sort of think I must have this.

Do you think white wine would also work? I wayyy prefer it to red.

LOL! I taught the lady at Trader Joe's how to cook Spaghetti Squash too, so you're not alone.
It kinda doesn't really taste like much, I can't really describe it, but it's really cheap so I'd just try it. You can also just put a little butter and parm cheese and eat it as a side.
You could also just leave the wine out, it's not a huge deal :)

LOVE spaghetti squash although...let's be honest here, it doesn't taste like the real thing. Covered in cheese and butter though...yes please! I definitely want to try this. How are the Meatless Balls (ha!)?

Sass - No Spaghetti squash will never be as delish as the real thing hahaha
The Meatless Balls ;-) are really good! We prefer them over other frozen meatballs we've tried.

This looks delicious. I LOVE spaghetti and could seriously eat it three times a day, but I've never had this before. I think I'll put it on our menu for next week (along with that meatloaf you had awhile ago). I'm trying really hard to make new things and figure out what we both like!
