Like, with most recipes, I surfed around the net and settled on a recipe. Usually I try to find a recipe with the least amount of ingredients, but enough that I'm not totally cheating and pie with pre-made crust and a can of pie filling (*cough* Sandra Lee *cough*).
Peanut Butter Chocolate Bars
adapted very slightly from this recipe on All Recipes
Ingredients
2 1/2 cups graham cracker crumbs
1 cup reduced fat peanut margarine
1 cup margarine, melted
2 cups semisweet chocolate chips
2 3/4 cups confectioners' sugar
Directions
1 - In a medium bowl, stir together graham cracker crumbs, confectioners' sugar, peanut butter and melted margarine. 2 - Press firmly into the bottom of a 9x13 inch pan.
3 - Melt chocolate chips over a double boiler or in the microwave, stirring occasionally. (This is were I failed miserably, I burned the chocolate chips. What I learned? DO NOT MICROWAVE THE CHOCOLATE CHIPS! Also, after you burn the chocolate chips don't still use them, my bars have a smoky s'mores taste now).
4 - Spread melted chocolate over the crumb crust.
5 - Chill for about 5 minutes, then cut into bars before the chocolate is completely set, then chill until ready to serve.
My burnt chocolate didn't spread very well so I didn't get the pretty smooth chocolate look = FAIL!

I love these! My grandma always makes them for us. The key to microwaving chocolate chips is to watch them and take them out periodically to stir them! They melt on the bottom before the top ones even look like their melting.
@Holly - That was definitely my problem. I was trying to do too many things at once and let them microwave WAY too long w/o stirring.
honestly they still look good to me. i'd eat anything chocolate and peanut butter though :)
What a bummer! I hate when I burn chocolate. Another tip to help is to put maybe 1/4 tsp. of veg. oil in with the chocolate chips...it helps them to melt more smoothly!
