This past Saturday Hubs and I went to an “Uno de Mayo Fiesta”. I’d seen a recipe for Margarita Cupcakes on Confessions of a Foodie Bride and thought this was the perfect opportunity to make them. I mean really, is there a better time for Margarita Cupcakes than a Cinco de Mayo party? I think not.

Her recipes if based on Martha Stewart’s lemon cupcake recipe, just swapping the lemon for lime. I used a different icing recipe based on Sprinkle’s Cupcakes’ Lemon Buttercream Frosting, only I substituted tequila for the vanilla to make them more Margarita like… Olé!

Those look amazing. They remind me of my favorite flavor of cupcakes at this little bakery I go to in Boston: mojito cupcakes. Yum.
yum! I made these tonight with 1/2 the frosting using 1 stick of butter an a Tbl of shortening instead of just shortening (I'm not a frosting overkill kinda gal). AMAZING. 4 of us ate 18 cupcakes. Yes, that's 4-5 PER PERSON. Wow. Quatro de Mayo (cinco minus uno) is now my favorite day of the year, the day I get to make lime cupcakes with tequila frosting!

@Violarulz - Quatro de Mayo sounds like the best holiday EVER! The original recipe actually calls for butter, but since Hubs can't eat butter (lactose. It good to hear that a mixture of both works, maybe next time I'll try margarine & shortening :)
We make stuffed sopapillas. So good. I also have a margarita cookie recipe I love from Smitten Kitchen. It has tequila in it and is SO good!
Good gracious, the deliciousness.....mmmm! Why don't you live closer to me so that we can have baking parties? Haha...

Today is the National Margarita Day and people are trying CRAZIEST varieties of margarita, from margarita Cup Cakes to Margarita Flavored Ice-Creams. And your recipe is just so WONDERFUL. I'm going to make them today and throw a party for my friends to wish them a HAPPY National Margarita Day 2011.
